Iowa beef with a real Chicago connection

Our family has raised cattle in Iowa since 1873. Chicago is part of that story: G. L. Mundorf expanded the family business by shipping cattle and hogs to the Chicago Union Stockyards. Today, the route to your kitchen is different, but the source is still a family farm in Southwest Iowa.

That history matters most when it comes with clear answers about today's beef. Our Angus cattle are pasture raised and grass fed, then finished with grain, including corn. Our reserve steaks and beef shares are dry-aged up to 21 days; our single-source ground beef is dry-aged for 14 days. We do not describe our beef as 100% grass finished.

Choose a beef box before committing to a half cow

A box is the practical first step when you want to try our beef without reserving a harvest date. The sampler brings together three different steak cuts and three pounds of ground beef. That lets you compare a ribeye dinner, a filet, a strip steak, and everyday cooking from the same farm before deciding on a larger order.

If the freezer is mainly for special dinners, choose the Dry-Aged Steak Box. Its 16 steaks span six cuts, including boneless and bone-in ribeyes, T-bones, filets, strips, and sirloins. If burgers, meat sauce, and tacos take up most of the menu, our ground beef is a more focused purchase than an assortment of roasts you rarely cook.

A quarter or half cow serves a different purpose: a long-term supply with custom cutting. Do not decide from steak count alone. Receiving frozen beef at a Chicago apartment or house

For an apartment or condominium, plan the handoff before checkout. Use a complete unit number, confirm that the building can receive a perishable package, and arrange to bring it inside promptly. A locked lobby or an unattended package room is a receiving issue to resolve in advance, not a reason to assume the carrier will call you.

Our standard shipping policy covers the continental United States. Boxed orders ship Monday through Wednesday, with most arriving one to three business days after shipping. This is a transit estimate, not a same-day Chicago delivery service or a promise that every order leaves the day it is placed.

Make the freezer plan match your household

A freezer full of beef is useful only if you can find and use the cuts. Reserve one area for one-pound ground beef packages, another for steaks, and a third for slow-cooking cuts. Keep an inventory on the freezer door so an interesting roast does not disappear underneath weeknight staples.

Use your own weekly cooking pattern to choose a share. As an illustration, 100 pounds divided by four pounds cooked per week is about 25 weeks of supply; at two pounds a week, the same amount is about 50 weeks. These are planning calculations using the advertised approximate quarter-share weight, not a shelf-life promise or an exact yield guarantee.

Two households can discuss splitting a larger purchase, but agree on the cut sheet and distribution first. An equal weight split does not necessarily give each household identical steaks and roasts. Ask us what can be arranged, including packaging and the collection plan, before assuming the order can be split into separate deliveries.

Does the deposit cover the entire beef share?

No. The deposit reserves the share and is part of the listed total. A quarter is $1,250 total with $500 down; a half is $2,350 with $800 down; a whole is $4,697 with $1,200 down. Check current listings and any delivery charges before purchase.

How is the beef packaged for shipment?

Our beef ships frozen in an insulated box with coolant, and our farm information describes vacuum-sealed packaging. Put the order away promptly after arrival. Read the receiving guidance and shipping policy before ordering, particularly if a building staff member will accept the package for you.

Can I choose the cuts in a beef share?

Beef shares offer custom-cut choices. We send a cut sheet ahead of the harvest date and help you work through options. Choose around the meals you cook, including steak thickness and roast preferences, rather than expecting an unlimited supply of every cut from one animal.
