If you want to buy half a beef, a quarter, or a whole beef in Council Bluffs, you are buying from a fellow Iowa family. I am Jeff Mundorf, and my family has raised cattle on our ground near Red Oak, Iowa, about forty-five minutes southeast of Council Bluffs, for seven generations. We bring fresh, dry-aged beef shares right to the Council Bluffs area, and farm pickup is easy. A half a beef from us is one animal, cut to your family's order, not grocery-store beef blended from a dozen sources you will never know.
Honest, all-in pricing, prorated to the animal's hanging weight:
A half beef works out to roughly $11.75 a pound, and that price is the same per pound whether the package is ground beef or a dry-aged ribeye. For Council Bluffs there is no separate delivery bill tacked on at checkout.
Every share is pasture-raised, grass fed and grain finished Angus, dry-aged for real flavor: fourteen days on the carcass, and twenty-one days on the loin for our reserve steaks. A half a beef typically brings home ribeyes, New York strips, sirloins and filets, chuck and rump roasts, short ribs, brisket, stew meat, and around fifty pounds of ground beef. You pick your own cuts on a cut sheet: how much goes to steaks versus ground, how thick the steaks are cut, and whether to keep a cut like brisket whole for the smoker. We walk you through every decision.
Here is the part most Council Bluffs families miss. A half beef puts dry-aged steaks that run fifty dollars a pound or more at a steakhouse in your freezer at the same $11.75 a pound as your ground beef. Buying half a beef once, and pulling exactly the cut you want out of the freezer all year, beats paying grocery-store prices cut by cut every week.
Council Bluffs is practically our backyard, and Omaha is just across the river, so see our Omaha beef shares page too. You can pick your beef up at the farm near Red Oak, or we deliver it frozen and packed straight to the Council Bluffs area on our regular route. Either way it arrives solid-frozen and freezer-ready. Tell us which is easier for your family and we take care of the rest.
We are not a warehouse with a farm photo on the label. Seven generations of my family have raised cattle on this Iowa ground, my son Walker works it with me now, and I can tell you which pasture your animal stood in. We dry-age every carcass and finish our cattle the old way, and we bring an Animal Science background to the cut sheet so you end up with beef that fits how your family actually cooks.
Do you deliver to Council Bluffs? Yes. We deliver frozen to the Council Bluffs area, or you can pick up at the farm near Red Oak.
Can I choose my own cuts? Yes. You fill out a cut sheet and we help you with every choice, from steak thickness to how much ground beef you want.
I have never bought half a beef before. Is it complicated? Not at all. We do this with families every week and walk you through the whole thing, so a first-time order feels simple.
How much freezer space do I need? About 3 cubic feet for a quarter, 6 for a half. A chest freezer or part of a standing freezer handles it.
How long until I get it? Roughly three to four weeks after the animal is harvested, once dry-aging and processing are done.
